How to use it
- Overnight Soaking: Soak chickpeas in ample fresh water for 8–10 hours (or overnight) to allow them to swell to full size.
- Pressure Cooking: Drain and pressure cook with fresh water, a pinch of salt, and whole spices (bay leaf, cinnamon) for 5–6 whistles until fork-tender and creamy.
- Amritsari Chole: Simmer cooked chickpeas in a rich onion-tomato gravy with ginger, garlic, and freshly roasted chole masala.
