How to use it
- Authentic Andhra Pesarattu: Soak whole moong for 4–6 hours. Grind with green chilies, ginger, and cumin into a smooth batter; pour hot on a tawa for protein-rich green dosas.
- Kerala Cherupayar Curry: Pressure cook whole moong for 3 whistles. Season with coconut oil, mustard seeds, curry leaves, shallots, and crushed garlic; serve with kanji (rice gruel).
- Sprouted Protein Bowl: Sprout overnight and steam lightly for 3 minutes. Season with chaat masala, lemon, and pomegranate.
