- Mustard seeds5g (1 tsp)
- Green chillies (slit) & Ginger (grated)15g (2 chillies, 1 tsp ginger)

Method & Step-by-Step Instructions
Follow each step carefully for the authentic aroma and taste

Soak HealEx Foxtail Millet for 30 minutes. Pressure cook with 400ml water and 0.5 tsp oil for 2 whistles. Spread on a plate to cool completely into separate grains.

Heat 2 tbsp oil in a heavy pan. Add raw peanuts and roast on low flame until crisp and golden brown.

Add mustard seeds; once they pop, add chana dal and urad dal. Fry until dals turn light golden.

Add slit green chillies, grated ginger, hing, and fresh curry leaves. Sauté for 30 seconds.

Add turmeric powder and turn off the flame (prevent turmeric from scorching).

Immediately squeeze in 35ml fresh lemon juice and add salt. Mix well with the warm tempering.

Add the cooled, fluffy cooked foxtail millet. Gently toss with a wide spatula until every grain is coated in the vibrant yellow lemon seasoning.

Pack into lunchboxes or serve at room temperature with roasted papad and coconut chutney.
