Method & Step-by-Step Instructions
Follow each step carefully for the authentic aroma and taste

Rinse HealEx Black Channa and soak in 4 cups of water for 8-10 hours or overnight.

Pressure cook with 2.5 cups water and 1 tsp salt for 5-6 whistles until soft and tender. Retain 0.25 cup of the cooked channa water.

In a small bowl, mix coriander powder, cumin powder, amchur, chilli powder, garam masala, and black salt with 3 tbsp of warm channa water to make a wet spice slurry (this prevents spices from burning in ghee).

Heat ghee in a kadai. Add cumin seeds and hing until sizzling. Add ginger juliennes and slit green chillies; sauté for 30 seconds.

Pour in the wet spice slurry and cook on low heat for 1 minute until ghee floats to the top.

Add the boiled black channa and remaining retained stock. Mix well.

Cook uncovered on medium flame for 5-7 minutes, stirring continuously until the water evaporates and the fragrant masala thickens and coats each channa bean.

Turn off the heat, garnish with fresh coriander and extra ginger juliennes. Serve warm with poori and sooji halwa.
