Method & Step-by-Step Instructions
Follow each step carefully for the authentic aroma and taste

Soak HealEx Black Channa or Naatu Channa overnight (8-10 hours). Pressure cook with salt and 3 cups water for 5-6 whistles until soft.

In a dry pan, roast grated coconut with fennel seeds, whole spices, and a sprig of curry leaves on medium-low heat until dark golden brown. Do not burn.

Add coriander powder and chilli powder in the last 30 seconds of roasting. Cool and grind into a silky-smooth paste adding very little water.

Heat 1 tbsp coconut oil in a pan. Sauté sliced shallots, crushed ginger, and garlic until translucent and fragrant.

Add the boiled channa with its cooking stock, followed by the ground roasted coconut paste. Mix well and adjust water to desired gravy consistency.

Bring to a gentle boil and simmer for 10-12 minutes on low flame so the flavours marry together.

Prepare the tempering: Heat 1 tbsp coconut oil, splutter mustard seeds, add a few sliced shallots, dried chillies, and curry leaves. Pour over the curry and cover immediately.
