Method & Step-by-Step Instructions
Follow each step carefully for the authentic aroma and taste

Rinse HealEx Foxtail Millet and moong dal 2-3 times in running water. Soak in water for 30-45 minutes (soaking reduces phytic acid and ensures soft, easily digestible grains).

In a pressure cooker, heat 1.5 tbsp pure cow ghee. Splutter cumin seeds, mustard seeds, and a pinch of hing.

Add grated ginger, slit green chillies, and chopped onions. Sauté until onions turn translucent.

Add chopped tomatoes, carrots, green beans, and green peas. Sauté for 2-3 minutes with turmeric powder and salt.

Drain soaked foxtail millet and moong dal; add to cooker. Gently roast for 1 minute with the aromatic ghee-vegetable base.

Pour 900ml water (4.5:1 ratio for porridge-style soft khichdi). Stir well, taste for salt, and close cooker lid.

Pressure cook on medium flame for 3 whistles. Allow steam to release naturally before opening.

Drizzle with 1 tsp hot ghee, sprinkle freshly cracked black pepper and chopped coriander. Serve steaming hot with curd, raita, or spicy lemon pickle.
