Method & Step-by-Step Instructions

Follow each step carefully for the authentic aroma and taste

  1. 1

Dry roast HealEx Foxtail Millet in a pan on low flame for 4-5 minutes until warm and nutty. Set aside.

  2. 2

Heat oil/ghee in the same pan. Splutter mustard seeds, cumin seeds, chana dal, and urad dal until golden.

  3. 3

Add chopped green chillies, grated ginger, hing, and curry leaves; sauté for 30 seconds.

  4. 4

Add chopped onions and fry until light pink. Stir in chopped vegetables and cook for 2 minutes.

  5. 5

Pour 600ml water and add salt. Bring to a vigorous rolling boil.

  6. 6

Slowly pour the roasted foxtail millet in a steady stream with one hand while stirring continuously with the other to avoid lumps.

  7. 7

Cover with a tight lid, reduce flame to the lowest setting, and let it cook undisturbed for 10-12 minutes until all water is absorbed and grains are tender.

  8. 8

Drizzle with 1 tsp ghee, squeeze fresh lemon juice, and garnish with coriander. Serve hot with coconut chutney or spicy ginger pickle.
