Method & Step-by-Step Instructions
Follow each step carefully for the authentic aroma and taste

Wash HealEx Foxtail Millet and urad dal in separate bowls until water runs clear. Add methi seeds to the urad dal. Soak both bowls in plenty of water for 5-6 hours.

First grind urad dal and methi with cold water in a wet grinder or blender until frothy, light, and doubled in volume (like whipped cream).

Next grind soaked foxtail millet and poha with minimal water into a slightly coarse batter (like fine semolina).

Combine both batters in a large bowl. Add rock salt and mix thoroughly using clean hands (the natural microbes on hands aid natural fermentation).

Cover and let it ferment in a warm place for 8-10 hours until the batter rises and turns bubbly and airy.

To make soft Idlis: Gently stir fermented batter without deflating air bubbles. Pour into greased idli plates and steam for 10-12 minutes on high flame.

To make crispy Dosas: Thin a portion of the batter with 2-3 tbsp water. Pour a ladleful on a hot tawa, spread thin in circular motion, drizzle ghee/sesame oil, and roast until golden brown and crispy.

Serve hot with groundnut chutney, ginger allam pachadi, or spicy tiffin sambar.
